THE HISTORY OF WINVIAN FARM
In 1775, Dr. Seth Bird, an eccentric but respected physician known for bringing a coffin along on his house calls, built a home for himself and his family in the Litchfield Hills of Connecticut. It was a white clapboard beauty, aproned with meadows and woods, and a comfort and sustenance for the generations.
With the addition of eighteen individually designed luxury cottages and Hadley Suite, Winvian Farm remains in the Smith family today, lovingly restored by Maggie Smith, her daughter Heather and son Win Smith III into a luxurious, unconventional and absolutely magnificent getaway.
The Winvian’s location is perfect for those who want to get away from it all. The estate is quiet, relaxing and secluded. There is a pretty lake a few minutes northwest of the property, and Litchfield Country Club is an easy drive away, too. Bigger towns such as Waterbury and Torrington are just 20 minutes away, and there are several state parks nearby. But most guests who stay here are looking for seclusion.

FINE DINING MENUS FROM THE CHEF
The Restaurant at Winvian Farm’s multi-course fine dining menu changes almost daily; with the seasons, the ever-evolving gardens, even the patterns of the weather. Each plate presented with such pride at your table is an epicurean expression of what is just outside the windows: field-fresh, delectable, inspired… and so spontaneous that the evening’s prix fixe menu is finalized only hours before your meal. Below are examples of some of the earthy delicacies you might come upon. When our gardens are in full production, eighty percent of all vegetables on the menu, as well as the herbs and organic flowers on your table come from our gardens.
To complement your culinary experience we have created an eclectic selection of wines in our wine cellar, having assembled wines from 13 countries and 37 regions including biodynamic, sustainable and organic. The grand finale: a flight of surprising seasonal desserts from our award-winning Pastry Chef Jim Hutchinson.
